Cook With Love:Chicken Karahi
A delicious Pakistan delicacy with tomatoes and cream-based.It can be little spicy but definitely a breathtaking experience upon relishing. Pakistan gourmet is almost closer to Indian dishes probably due to the geographical factor of both countries. This dish is spicy and thicker consistency which goes very well with rice, bread,chapati and naan.
Serving:5-6 pax
Ingredients:
1kg chicken, cleaned and marinated in 1 tsp turmeric for 10mins
5 tomatoes mashed
3 bay leaves
5 cardamon pods
1 cinnamon stick
3 cloves
5-star anise
2 tbs of crushed garlic and ginger
10 curry leaves
some ginger julienne
2 green chillies sleeved
1 tsp coriander powder
1 tsp cumin powder
1 tsp pepper powder
2 tbsp chilli powder
1 tbsp whisked curd
100mls cooking oil
Water 100mls
salt as per taste
some coriander leaves for garnishing
Steps:
1. Heat oil and add in the bay leaves, cinnamon, cardamon,cloves and star anise
2. Then let in the crushed ginger-garlic and curry leaves
3. Toast in chicken and sprinkle some salt.
4.Cook about 10minutes before adding in the mashed tomatoes and mix well
5. Pour water and cook for another 20 to 30 minutes at medium heat
6.Spoon in all the spices powder and mix well
7. Pour the whisked curd and the ginger with chillies
8. Give about 5 minutes before removing from heat
9. Sprinkle with coriander leaves and serve hot.
Tips:
- Whole spices should not be over roasted which may impair the taste
- Ideally, pound the ginger garlic to add the flavour
- Tomatoes can be boiled or steamed prior to the mash
- The consistency may be thickened as you add the spices powder so you may adjust according to your preference with water
- Choose to use plain and non-preservative containing curd to enrich the taste
