Cook With Love:Boiled Fish Curry

 


Boiled fish or Ikan rebus in Malay is the typical fish offered in every market in Malaysia, also most preferred fish to consume as curry or gravy. Usually, a bulk amount of fishes are boiled with water and salt by the vendors for their customer. They are purchased, cleaned gently and cooked to relish the amazing taste , truly amazing! The fish are usually very fragile so should be handled gently otherwise it might get smashed and ruin your dishes. Today we will see how to cook them in Indian curry style flourished with aromatic yet healthy spices.

Serving 5 to 6 pax

Ingredients:
10 boiled fishes, cleaned and soaked with turmeric powder before frying it to crispy
5 inches of ginger
10 cloves of garlic
1 big onion
2 green chillies sleeved half
1 big tomato, half cubed and another half sliced
10 curry leaves
1 tsp mixture of mustard, fenugreek, fennel and cumin seeds
1 lime size tamarind paste dissolved in 500mls water
1 tsp cumin powder
1 tsp coriander powder
1 tsp fennel powder
2 tbsp curry powder
2 tbsp chilli powder
1/2 tsp asafoetida
3 tbsp evaporated milk
150mls cooking oil
salt as per taste
Steps:
  1. Crush the garlic and ginger together
  2. Heat oil and add the mixture of mustard, fenugreek, fennel and cumin seeds.
  3. Then let the curry leaves, crushed ginger garlic, green chillies and onion to roast
  4. Add the asafoetida then add the cubed tomatoes
  5. Adjoin all the spices powder with salt and pour the tamarind solution
  6. Allow 10-15 minutes till the curry thicken, but not too thick or creamy
  7. Then let in the fried fish and sliced tomatoes
  8. Pour the evaporated milk
  9. Cook for 5 minutes and sprinkle some curry leaves upon taking off from the heat
  10. Serve warm with plain rice, also can be taken with bread , poori, chapati or idly.

Tips:
  • Ideally, pound the garlic and ginger with pestle and mortar instead blender them
  • Do not overturn the spices seeds as it may affect the taste
  • Sprinkle little salt while mixing with spices powder and test the taste later upon cooking due to the salty mixture in boiled fish
  • Evaporated milk can be substituted with coconut milk
  • Ensure you fry the fish to crispy and not fully fried so it fuses well with the curry later and tastes good too
