Cooking With Love:Squid Thoran
Squid Thoran is a popular Indian dish from Kerala, India. Thoran means a dish cooked with coconut. This special dish offers squid cooked with spices and coconut, will definitely turn as your family's favourite dish.
Serving for 3-4 people
Ingredients:
500gm squid, cleaned and cut in rings
2 tsp turmeric powder
1 large onion, cut small
5 cloves of garlic crushed
3x3cm ginger crushed
1 tomato diced
10 curry leaves
1 tbsp fennel seeds
A lime size tamarind dissolved in 150mls of water
2 tbsp coriander powder
1 tbsp fennel powder
1 tbsp cumin powder
1 tsp crushed black pepper
1 tbsp curry powder
5 dry chilli, roasted and coarsely blended
5 tbsp half roasted desiccated coconut
salt as per taste
5 tbsp of coconut oil
Methods:
- Marinate the cleaned squid with turmeric for about 30minutes.
- Heat coconut oil in the wok and drop the fennel seeds, followed by crushed ginger and garlic.
- Then add onion, curry leaves and tomato, allow 2 minutes to cook.
- Squeeze the excess water from squid and place them in the wok.
- You will be able to see more water releases from the squid while it cooking so just keep whirling so it doesn't burn for about 15minutes.
- Next, add in the fennel, cumin, curry and coriander powder with some salt.
- Drizzle the tamarind water and continue whirling for another 15minutes or till the contents thicken.
- Now let in the blended dry chilli and crushed black pepper powder; you may adjust the spiciness as per your preference.
- Finally.add the desiccated coconut before let stove off.
- Serve while hot with rice, bread or glutinous rice.
Tips:
- Apart from marinating squid with turmeric, a few drizzles of lemon juice may be squeezed to add flavour.
- Tamarind water helps to eliminate the squid smell.
- The spices allow the dish to remain fresh even for days in the fridge; you may microwave or heat prior to consumption.
- Coconut oil is ideal for a health-conscious person.
