Cook With Love:Bean Porridge
Bean porridge or also known as bubur kacang hijau is a popular dessert and breakfast among Malaysians which belong to the Malay community. The dish is made of green bean which is commonly found in any groceries in Malaysia. It is easy yet healthy delicacies with iron-rich green beans.
Serving for 4-5 pax
Ingredients:
1 cup of green beans, soaked in plain water for 1 hour after washed thoroughly
1cup thick coconut milk
1 cup of brown sugar
1 tsp salt
2 leaves of tied pandan
1/2 cup of sago(known as tapioca pearls)
1 litre of water
Steps:
- Boil the green beans in the water in a pan.
- Wait till 30minutes or until it cooked , then add the brown sugar and pandan leaves.
- Add in sago while it boils and proceed with adding the coconut milk.
- Swirl continuously so it doesn't get burnt but ensure it doesn't too thick too, you may add some water to maintain the consistency.
- Lastly, sprinkle some salt and off the stove.
- Serve hot with tea or coffee; best consumed while hot.
Tips:
- Pinch the green bean with fingers to test if it is cooked before combining with the other ingredients
- Sago may make the desserts to thick like jelly so avoid adding too much.
- May choose to add 3 tbsp of condensed milk a few minutes before ending to add flavour.
- Molasses and muscovado can be substituted instead of brown sugar but the flavour may differ.
- Can be kept for about 2 days which need a little heat and dilute with some water if too thick before consumed.
- Variations can be done bu using red bean instead of green bean.
- Taste great if served with durian.
